Refreshing cucumber honeydew agua fresca are vibrant green and the perfect way to quench your thirst. Agua Frescas are simply fruit and water blended together with a touch of sweetener and lime juice. You can strain out any pulp for a thin cool drink or serve it as it comes together from the blender. While you can make this drink from many kinds of fruit, (see this post for Watermelon Agua Fresca), I love the combination of cucumber and melon.
The Health Benefits of Cucumbers
Cucumber water is often served in spas. The mild flavor of the cukes gives the water just a fresh taste. But cucumbers also add nutrients and antioxidants that help with weight loss, anti-aging benefits, and joint health.
Slicing cucumbers have thick dark skin and lots of seeds that can impart a bitter taste. I prefer to use English cucumbers or Persian cumbers which are smaller and have thin skin that you don’t need to peel. This is a bonus since most of the health benefits are found in the skin. Plan on 1-2 standard cukes to 1 English cumbers or 2-3 of the smaller Persian cukes. Check out this post for more information on cucumbers.
Honeydew melon reinforces the green coloring of this drink. (It would be perfect for St. Patrick’s Day.) It adds sweetness and a creamy texture, so I often don’t strain the pulp. As it sits, the pulp will separate and float on the top. To recombine, just give it a quick stir to recombine. To learn how to choose a good melon, check out this post.
Use Mint Lime Simple Syrup for this Cucumber Honeydew Agua Fresca
This is a bonus recipe to use the syrup that you made for Mint Julep Fruit Salad. (Two for one recipes are some of my favorite recipes!) You should have about 1-1/3 cups of syrup left after making the fruit salad which is just the amount you need for this drink.
Water to Fruit Ratio
Agua frescas vary in intensity with the type of fruit as well as the amount of fruit to water used. I find that a ratio of 1 part water to 2 parts fruit is a good flavor. I also add ice to my drinks which is outside of the water-fruit ratio.

Description
The most refreshing cucumber honeydew agua fresca is a vibrant green that is perfect to quench your thirst.
Ingredients
- 2 English Cucumbers (about 3 cups of cucumber chunks)
- 1/2 honeydew melon (about 5 cups of melon chunks)
- 3 cups cold water
- 1–1/3 cups Lime Mint Simple Syrup
Instructions
- In a blender, combine cucumber and melon chunks with 3 cups water. Pulse for 2-3 minutes until well blended.
- Remove the lid and check the fruit puree consistency. If needed blend for an additional 60 seconds.
- Add the lime Mint simple Syrup and blend to just combine.
- Transfer the Cucumber Honeydew Agua Fresca to a pitcher.
- Add crushed ice to glasses and garnish with a slice of lime and chunk of honeydew.
- Serve cold.
Notes
Cucumber Honeydew Agua Fresca can be refrigerated for up to 2 days but is best served fresh.
I like to keep the pulp with all the fiber in this drink, but you can easily pass the drink through a fine-mesh sieve to remove the pulp. As it sits, it will begin to seperate with the bright green liquid on the bottom and the lighter-colored thick pulp on top.
